Thanks. I may be doing a food trip to NY this winter. I'll be sure to visit all the Michelin 3-stars as well as Masa, and maybe Daniel and WD-50.
As for the photos, I haven't had a problem in any restaurant so far. I do not use flash, which makes snapping away a lot less intrusive. Also it helps to have a camera that's good in low-light; I have a Fuji FinePix F30.
For the kitchen tours, I just talk to the maitre d'; he should take care of you. Though I will say that I would wait until the restaurant is less busy to go in there.

This is Kevin, the poster of the linked blog. I've been to Ad Hoc and Bouchon as well, though my meal at Ad Hoc was closer to 10% than 5% of French Laundry. It is indeed a great restaurant, though a completely different experience than dining at the Laundry.
