Because of our vicinity to the Finger Lakes, we do a lot of wine and chocolate pairings. Most of our truffles pair best with a medium red wine or some of the sweeter dessert wines (it's actually quite pretty difficult to get champagne and chocolate to play nice together). Pairing is very much about experimenting, so there are no hard and fast rules. One of the most unique pairings we do is our Milk Chocolate Sesame Bark with the 2006 Chardonnay from Ravines Wine Cellars.
