As you might guess, Maximilian was right. The "airated" (as he calls it) wine opened up, whereas the freshly poured wine had very strong tannins.
And even in a glass this large, the shape is important for how it distributes the wine on your tongue, and the size helps bundle all the wonderful aromas together.
Maximilian actually believes food ought to be served in stemless copita-like glasses for the proper appreciation of the smells. He remarked that one should probably only use chopsticks with the glass, though. Don't want to break dinner! 22/07/09
