Celebrating Black Truffle Season At Patina
The other day my colleague Carrie Coolidge mentioned the black truffle tart at the Francois Payard Bakery in New York City. Black truffles are also being celebrated at Patina in Los Angeles. The Truffle Dinner Series on Wednesday, January 11 and Thursday, January 12, 2011 features a three-course, five-course and seven-course menu for $95, $135 and $175 (wine pairings are also available). Mr. Christopher Poron, of the PLANTIN Truffle Company in France, spends the evening tableside sharing stories of harvesting these earthy treasures.
The three course menu a velvet sunchoke velouté with truffle ballotine, milk-fed veal with crushed truffle and a caramelized brioche with Bartlett pear with truffle sorbet. The five course menu adds in a winter glazed vegetable mosaic with black truffle condiment, seared day boat scallops with black truffle and endive and black truffle brie de Meaux to the dessert and entree from the three-course menu.
The seven-course menu includes a peasant black truffle salad (for the recipe click here), artichoke ravioli with a truffle emulsion, and butter poached lobster to the vegetable mosaic, veal tenderloin, brie de Meaux and caramelized brioche.
