I am bothered by dismissive comments re: the farm to table "trend". They should take a lesson from Chef Jose Andres as quoted from his recent 60 minutes interview. "Chefs of America, we should be more outspoken about the way we are feeding America, not only about what I'm feeding them in my restaurant or in the great restaurants of America. It's only one, two or three percent of the Americans that eat in those restaurants. We should be more committed about the other 97 percent of Americans that don't come to our restaurants. That should be what I hope one day will be my little contribution".
I am all for innovation and having the opportunity to experience cuisines from around the world here at home, but we also have to remember that most people aren’t fortunate enough to have those experiences and are forced to consume processed garbage, mostly due to a misunderstanding of their options. With fame and wealth, also comes a greater sense of responsibility. I admire Chef Andres creativity and vision. Also Jamie Oliver is an inspiration! A group of us were inspired to create a community garden and we are starting a non profit, inspired by people like them. I hope in our small way, we can make a difference too. www.caryspocketgarden.org
