Like me, Alder over at Vinography has a curious obsession with bizarre ways to age wine. He has tracked down some interesting info on a winery in Chile that ages their bottles on the ocean floor. Vina Casanueva winery says that the ocean's combo of pressure, temperature and filtered sunlight does a great job of aging wine. The Cava Submarinas wines also have special labels that don't come off in the water. The Vina Casaneuva website includes a video about the wine process which shows cheerful divers en route to the underwater cellar (interspersed with shots of a lovely wine mermaid). Puts a whole new twist on catch of the day.
