Caviar from Israel?

Israel is entering the caviar export market with Galilee Caviar, a subsidiary of Dan Fish Farms. Sturgeon which produce roe, do not exist in Israel so they will be imported from Russia and raised in fish farms. Dan Fish Farms has developed a way to make the sturgeon produce their roe in half the time. Sturgeon generally produce roe when they mature at age 14 but they have found a method to bring their maturity to around seven or eight years. The article doesn't say what method they use but the company expects to do $2 million per year in revenue.
