Wine and Cheese Aren't the Perfect Pair?
Think that wine and cheese are the perfect pair? Researchers at the University of California at Davis beg to differ. This article in the San Francisco Chronicle covers the work of graduate student Berenice Madrigal who, as part of the studies for her master's in viticulture has been studying various pairings of red wines and cheeses. The results prove that it is rare that the wine and the cheese end up enhancing each other. The article breaks down the research and the grueling job of tasting wine and cheese together, but in most cases, cheese mutes wine's more subtle qualities. The end result of the survey, Madrigal says, is that people shouldn't worry about matching their wines with cheeses. To those of us attached to a certain pairing (for me it's a good pinot noir and a wedge of manchego) it's hard to believe that the flavor magic that seems to go on in our mouths is all fiction.

Although this must have been a very pleasant research project, I would imagine, I have to go with my instincts on this one. I think that whether we chalk it up to tradition, myth or folklore, wine and cheese are a marriage that is made to last!
