At $205, the shark fin soup called "Buddha Jumps Over the Wall" at Kai Restaurant in Mayfair is London's most expensive soup. The delicacy which includes the fin as well as abalone, Japanese flower mushroom, sea cucumber, dried scallops, chicken, Hunan ham, pork and ginseng costs so much because of the many steps involved. The soup's various components are simmered both separately and together, for hours on end to create a rich soup. Shark fin soup has a long history in China and is often served at weddings or other celebrations. The rise in "finning" in the world's waters has led to increasing bans on the practice so this might be the type of delicacy that you should enjoy before it gets outlawed.
