Ice Wine
The Corner Table reminds us that it's ice wine season in Ontario, Canada. While the idea of drinking something with the word ice in it may not sound appealing to someone suffering the big chill on the East Coast, this is the time for creating ice wine. Ice wine is a late-harvest wine generally made from Reisling, Vidal or Cabernet Franc grapes pressed while frozen. The result is a thick sweet dessert wine with honey and apricot flavors. One of the best wineries making ice wine is the Colio vineyard located in Harrow, Ontario. We salute the harvesters who brave the cold to deliver us this sweet elixir.
